A partir de un montador de nata convencional y debidamente modificado para ofrecer nuevas aplicaciones, Ferran Adrià (elBulli, Girona) viene desarrollando desde 1994 una técnica con la que elaborar espumas y preparar todo tipo de salsas. El sifón iSi GourmetWhip es un montador de nata al que se incorpora aire mediante unas cápsulas de aire comprimido. Gracias a este sencillo principio podemos convertir en espuma casi cualquier mezcla, dulce o salada y fría o caliente. Todo consiste en llenar el sifón con la mezcla deseada, enroscar el cabezal, cargarlo con las cápsulas de N2O, agitarlo, dejarlo reposar en el frigorífico o el baño maría, y nuestra espuma estará lista para ser saboreada.
Pacojet offers cooks the possibility to create an infinite amount of ice creams and sorbets, sweet as well as salted. We’re talking about a food processor, unique in its kind, which emulsifies food ingredients, in this case converting frozen ingredients into purée or soup without the need to defrost them first. The results are amazing: in only a few seconds, Pacojet produces a ready-to-spread cream, a filling, a soup or vegetable concentrate, an ice cream or fruit sorbet which preserves its natural aroma. The Pacojet processes ingredients in quantities of up to 10 portions, and its containers are ideal to keep the resulting creams in the refrigerator.
The Compact Roner is the obvious successor to the Roner. It consists of a thermostat and bucket together in one and the same appliance. They’ve added a timer counting down as well as a closed water circulation system to guarantee temperature stability.
