Our mission at Guzmán Gastronomy is to satisfy the growing demands of gastronomic professionals and offer them the best products for their kitchen.
Bread is and always will be a basic kitchen ingredient, yet ultimately it has lost much in quality and importance, standing at the background, being more of an extra than a fully appreciated and distinctive product which brings out the best in dishes and ingredients.
Aiming for a revaluation of bread, we have created an artisan workshop to produce premium quality bread, answering the needs of our clients.
The production process takes place in an artisan workshop yet designed to assure maximum alimentary safety. It's a manual process, except for the kneading and baking. All products are made with select flours, coming from North America, and using water purified through osmosis and ultraviolet irradiation, thus eliminating impurities and bacteria, without having to use any preservatives or additives.
The outcome of the process explained above is called "cristal bread" an exclusive product, developped by Guzmán Gastronomy. Through our manual production process, we've managed to achieve a very fine crust and smooth crumb as well as a porous texture, resulting in an amazing contrast between crunchy and spongy. This makes cristal bread the ideal garnish, bringing out the best in dishes and ingredients.
The product is sold pre-cooked and frozen and is designed for catering as it allows fast defrosting at room temperature (12-15 min) as well as fast toasting in a Salamander (broiler oven) or oven (approx. 1 min) before serving.
